Potato Soup

 

(Known in the story as ‘Everything Is Right With The World’ soup)
(Volume 2)

Ingredients

  • – 8 potatoes (I prefer using yellow, but white works as well), peeled and diced
  • – 2 quarts water or stock (I use vegetable stock, but chicken stock will also work well) 
  • – 3 yellow onions sliced
  • – ¾ c of milk
  • – ¼ c of cream
  • – 2 TBS butter (Can substitute with vegetable or olive oil)
  • – Salt and pepper to taste
  • – ½ bunch of parsley chopped (optional)
  • – 2 green onions chopped (optional)
  • – ¾ cup sharp cheddar cheese grated (optional) 

 

Preparation

Step one: Place potatoes into a soup pot. Add the water and onions, sprinkle with a bit of salt and pepper, and cook over low-medium heat, covered, for about 45 minutes.

Step two: Remove pot from burner. With a hand masher, mashed the potatoes until smooth in the soup pot. Add the milk, cream, and the salt and pepper to taste. Return to burner, and reheat. Use immersion hand mixer or blender if too chunky.

Step three: Before serving, stir in the butter until fully combined. Serve hot in cold months, but can also be served cold in hot months.

Step four: mix the parsley and green onion together in a small bowl.

Step five: Ladle soup into bowls, and garnish with cheese and parsley onion mix.
